Spaghetti

Ingredients

1) Ingredients for Chicken:
Ground Chicken 2lbs.
Onion 1 medium sliced thin
Tomatoes (Roma) 2 chopped small
Cilantro/Coriander Leaves 1 small bunch chopped
Thai Chilies/Green Pepper 4 small as is (don’t cut)
Oil Olive oil 2-4 tbsp.

Spices for chicken:
Salt 1 tsp. Sea Salt
Paprika 1 tsp. (National brand preferably)
Turmeric Powder ¼ tsp.
Cumin Powder ¼ – ½ tsp. (Optional)
Ginger Paste 1 heaped tbsp.
Garlic Paste 1 heaped tbsp.

2) Ingredients for sauce mix:
Pregu Traditional Sauce Mix 1 regular bottle
Ragu Traditional Sauce Mix 1 regular bottle
(or any two different kinds of traditional/vegetarian sauces)
Mushrooms 2 small cans or 1 regular can
Ketchup 1 cup/as needed
Ground Chicken As cooked above (remove the Thai Chillies/green peppers before adding to the sauce)

Spices/herbs for sauce mix:
Black Pepper A pinch
Parsley Flakes(dried) ½ to 1 tsp.
Oregano (dried) ½ to 1 tsp.
Basil (dried) ½ to 1 tsp.

3) Ingredients for noodles:
Spaghetti Pasta (Jovial Gluten Free) 1 box (good for 3-4 people)
Olive Oil A few drops
Water

Steps

1) Method for chicken:
Heat oil in a medium pot on medium heat
Continue heating until sizzling slightly
Add chopped onions and continue coking
When onions turn brown and soft, add garlic
Stir and mix until sizzling stops
Add ground chicken
Stir and mix until lightly brown
Add tomatoes and mix
Cook until tomatoes get slightly mushy
Add ginger, all the spices and cilantro
Mix everything and cook until slight oil appears on surface

2) Method for sauce mix:
Put the Ground Chicken in a deep frying pan or a medium pot
Empty the two bottles of the sauces in it
Heat on medium heat
Stir for 5-10 minutes before adding the ketchup
Next add the spices and herbs
Let it cook for another 5-10 minutes
Stop and leave it on the side until the noodles are ready

3) Method for noodles:
Follow directions on the box or here is how I do it
Heat water in a big pot
When it starts boiling, add the noodles
I generally break the noodles in half
I use the brand given above since I prefer GF but it’s your choice what you want to use
Gluten Free generally takes longer verses regular noodles to make.
You have to keep checking every 10-15 minutes to see when the noodles are ready
Usually takes at least 20-30 minutes to be ready
Once ready, strain & drain the water by using a colander preferably
Let it sit for 30 seconds before adding a few drops of olive oil to the noodles
Mix it lightly & quickly using a tong. Try to avoid breaking the noodles while you do this.
Put it back in the put and heat for 1 minute or so.
Once ready, remove from heat

Serving:
Once sauce and noodles are ready, place the two in separate dishes since they are served separately

Guests add noodles in a bowl when they self-serve and add sauce as needed on top.
