Khageena (Egg and Onions)

Ingredients

Oil Less then 1/2 a cup
Coriander/Cilantaro A handful (chopped up nicely)
Green Chilli(es) 2 (Cut in thin circles)
Onions 4 Medium (or 2 if big ones)
Tomatoes 2 (Roma preferrably)
Eggs 6 (Beaten and set aside)
Salt Pinch to 1/4 tsp
Chilli Powder 1/2 a tsp. or according to taste

Steps

1	Cut all the vegetables and set aside separately
2	Heat oil, add onions and let them turn brown
3	Add tomatoes, green chillies and stir and mix
4	When mushy and leaving oil, add spices and mix well
5	Add eggs and quickly stir so the egg mixes well
6	Let it cook on slow heat for 5 minutes or until done (Slight oil will appear on top)
7	Garnish with Coriander/Cilantaro and serve hot with Roti
