Aaloo Kee Bhujia (Desi Mashed Potatoes)

Ingredients

Green Chilli(es) 2 (Cut in circles)
Water 4 cups
Oil 4-8 tbsp.(Preferrably deep)
Onions 1 (Cut in thin slices)
Potatoes 6 (Medium size, cut into 1/2 circles)
Garam Masala - Whole A little bit
Salt 1 tsp
Paprika A little over a 1/4 tsp
Cumin Powder 1/2 tsp
Turmeric Powder 1/4 tsp. (Optional)
Garlic About 1 tsp
Coriander Powder 1/2 tsp
Amchur Powder 1/2 tsp
Garam Masala - Powder 1/2 tsp

Preparation

1 Heat oil in a deep pot on medium heat
2 Add onions and start frying
3 Add garam masala and continue frying
4 Add green chillies and continue frying
5 Fry onions till golden brown
6 Add all the spices except paprika
7 Stir and mix well
8 Add potatoes, stir and mix
9 Add water, partially cover the pot and cook
10 Check in a bout 20 minutes to a half hour
11 Lower the heat to medium-low and fully cover the pot
12 When potatoes turn soft, add paprika
13 Cover again and cook for another 15 minutes or so
14 When done serve with paratha or chappatti
15 P.S. When adding garam masala whole add more cumin seeds then other stuff
