Rus Malai #2

Half & Half 2 qts
Sugar 3 1/2 - 4 cups.(According to taste)
Heavy Whipping Cream 2 pint or 1000 ml
Pistachios A handful(Grinded or Grated)
Evaporated Milk 1/2 can (Optional)
Vanilla 1-2 tsp
Rose Water 1 tsp. or so ( Optional)
Cardamom seeds/pods 6-8
Bay Leaf 2
Ricotta Cheese 2 lb


1 Mix half of the sugar with Ricotta cheese and bake in a 400 F oven for 1 1/4 of an hour. Use flat dish and cover with Aluminum foil
2 Check to see when the cheese gets hard and turns a pale brown shade. Take it out of the oven and set it aside
3 While the cheese in baking, thicken the Half & Half, Heavy Whipping Cream and Evaporated Milk(if added) in another container
4 Add the remaining half of the sugar, cardamom pods, bay leaf, Vanilla, Rose water(if added) and 1/2 of the Pistachios in the mixture cooking
5 Simmer over low heat for 1-2 hours. Stir frequently and thicken until the volume drops to about 1/2 of the original volume
6 Heat the mixture for a few more minutes and then set the heated mixture aside
7 Now get the baked cheese, cut it into 1 inch squares( or whatever shapes you want) and add to the heated, thickened mixture
8 Sprinkle and garnish "Rus Malai" with the rest of the Pistachios and refrigerate for a few hours before serving!
