Rose Water Optional (to taste)
Bay Leaf 1
Half & Half 2 qts
Sugar 2 Cups
Vanilla 1 tsp
Cardamom seeds/pods 5
Ricotta Cheese 2 lb


1 Mix 1 1/2 cups sugar with the Ricotta cheese and bake in a 400 F oven for about 1 1/4 hours in a flat dish covered with aluminum foil. The cheese should have hardened and turned a pale brown
2 Thicken the half & half by simmering over low heat for a long time. This is best done in a microvave; if a microvave is not availabe, do it over low heat and stir frequently. Thicken until the volume drops to around half of the original volume
3 Add the remaining 1/2 cup sugar, cardamom pods, bay leaf, vanilla and rose water (and any other flavoring you may want) to the half & half. Heat for a few moments
4 After the cheese has been baked, cut it into 1 inch squares and add to the hot, thickened half & half. Cool for a few hours in the fridge
