Aaloo Masala (Spicy Potatoes)

Green Chilli(es) 2 (Cut into thin circles)
Onions 2 (Cut into thin slices)
Potatoes 6-8 (Medium size)
Oil 6-8 tbsp.(Preferrably deep)
Tomatoes 1 can (Whole tomatoes, preferrably "Hunt" brand)
Garlic 1/2 tsp
Ginger 1/2 tsp
Turmeric Powder A pinch or 1/4 tsp
Salt 1 tsp
Paprika 2 tsp
Coriander Powder 1/2 tsp
Garam Masala - Powder 1/2 tsp


1 In a deep pan, cook potatoes for 15/20 minutes and then take them out
2 In the same pan, put onions and cook till slightly golden
3 Add green chillies, continue cooking for a couple of minutes
4 Add tomatoes and continue cooking for a few more minutes
5 Add ginger & garlic, less then half a packet of frozen peas & carrots
6 Add the potaoes back as well as a little bit of frozen broccoli
7 Add spices and cook till somewhat mushed up
8 Lower the heat, cover and cook for five minutes
9 Or until there is some oil on the surface
10 Serve with Naan, Chappatti, Roti or Rice
