Grilled Shrimp Skewers

1 Tbsp dijon mustard
1Tbsp fresh lemon juice
1 clove garlic, minced
1 Tbsp olive oil
Ground black pepper
1 Tbsp Old Bay seasoning
1 Tbsp minced fresh parsley
1 lb. medium shrimp, heads and shells removed, de-veined, tails on
4 skewers, metal or wooden


Preheat grill to medium high heat. Whisk together mustard, lemon juice, garlic, olive oil, pepper (to taste), Old Bay seasoning in a large bowl. Add shrimp and let marinate in refrigerator for 30 minutes. If you are using wooden skewers, soak them at the same time in water. This will prevent them from scorching when on the grill. Skewer shrimp in 2 places (The tail and the head) to keep the shrimp in place. Grill each skewer for 2 minutes per side and check for finished cooking. Shrimp should br pink and opaque when done.
